250 g | softened butter |
100 g | castor sugar |
1 | egg yolk |
1 pinch | salt |
2 teaspoons | vanilla extract |
1 1/2 tablespoons | freshly ground cardamom |
250 g | plain flour, sifted |
Cream together the butter and sugar. Add the egg yolk, salt, vanilla extract and cardamom and beat together. Add the plain flour and combine well.
Form the mixture into balls about 1.5 cm across, and press gently onto lined baking trays. Bake at 180C for about 18 minutes, until lightly golden around the edges, then cool on racks.
This recipe is also good with the addition of a little grated lemon peel, or a splash of orange flower water.
