Hi Elaine,

pecorino is an Italian sheeps cheese, often aged, hard and with a sharp flavour. You can substitute parmesan.

Lamb's lettuce is the green stuff you can see under the roasted vegetables in the photo for this recipe. It's also known as 'corn salad' for some reason, or 'mache' in France. It has quite a mild flavour but is nice and springy and robust, so it doesn't collapse when it's in a salad with heavier ingredients. You could substitute whatever green leaves you liked, thought.
