1 very large or 2 normal | tomatoes, good and ripe |
1/2 | red onion |
1/2 to 1 | red chilli |
1 | lime, juiced |
big pinch | sea salt |
| chopped coriander |
| chopped shallots, if you like |
Chop the tomatoes roughly. Drain them in a sieve for a few minutes if they are very juicy. Peel and chop the red onion very finely. Chop the chili as finely as possible, after removing the seeds and membranes.
Mix together all the ingredients, adding each according to your taste. Serve shortly after making, with guacamole and corn chips, or alongside a chili.
