Guacamole

3ripe avocados
1lime, juice of
1/2large red chilli, deseeded and finely chopped
handful or twochopped fresh coriander leaves
salt and pepper to taste

Cut each avocado in half, remove the seed, then scoop out the flesh into a bowl. Mash roughly with the lime juice. Stir through the finely chopped chilli and most of the coriander, trying to keep the guacamole a little chunky - don't beat it to a smooth paste. Add salt and pepper to taste. Sprinkle the rest of the coriander on top and serve at once.

Everyone has their own version of guacamole. I like it with these ingredients, although obviously the proportions change with the size of the avocados, the strength of the chilli, the juiciness of the lime, and so on. I just mix stuff in until it tastes right. I do think it is essential to use lime juice rather than lemon though. Other common additions you can play around with are finely chopped red onions, spring onions, crushed garlic, and chopped tomatoes.
