Double ginger biscuits

These biscuits take literally 5 minutes to prepare and 10 minutes to bake. This recipe makes about 24 biscuits. From Vogue Entertaining Cookbook 1999.

125 gbutter
1/2 cupcaster sugar
1 cupself raising flour
1 teaspoonground ginger
3 tablespoonsfinely chopped glace ginger (or more!)

Melt the butter in a saucepan with the sugar. Mix in the self raising flour and the ground ginger. Beat in the egg and the glace ginger until well combined.

Drop teaspoonfuls of the mixture onto a lined baking tray. Space the biscuits well as they spread quite a lot. Bake at 190C for 10 to 12 minutes or until pale brown.
