Let's Cook with Meg and Ted

Herb scones

2 cupsself-raising flour, sieved
2 tablespoonscream (you can use butter instead if you have no cream)
1onion, finely chopped
2 large sprigsparsley
4 teaspoonsdried herbs; OR a tablespoon or two of chopped fresh herbs
2 tablespoonsgrated cheese
freshly ground pepper
milk to mix

Mix cream into flour (or rub butter in). Add cheese, herbs, pepper and onion, and mix. Mix with a little bit of milk to form a dough. Knead lightly.

Press out dough to 1 inch thickness. Cut out rounds. Arrange on tray with sides touching, brush with milk (and sprinkle with cheese, if you like).

Cook in 220C oven for 10-15 minutes. **Oven must be very hot from start. Turn it on to preheat well before you start making the dough. **

Yet another one of my mother's recipes. Thanks Mum!
