These are the basic ingredients for hummus bi tahina. Many recipes use a lot more tahini than this one - as much as 150 g tahini to 150 g chickpeas - but I prefer it like this. Play around with it until you find the taste that you like yourself.
250 g | cooked chickpeas |
50 g | tahini |
1 | lemon, juiced |
1 clove | garlic |
2 tablespoons | olive oil |
| ground cumin |
| salt and freshly ground black pepper |
| flat-leaf parsley and cayenne pepper to serve, if you like. |
In a food processor, blend the chickpeas, tahini, lemon juice, garlic and olive oil until it makes a paste. Add a little water to smooth it out if necessary. Add cumin, salt and pepper to taste. You may also need to add a little more lemon juice. Serve with pita bread, tabouli, etc.
