Keith's Murwillumbah pasta |
Angel hair pasta (capellini or vermicelli will do) |
finely chopped parsely |
freshly sqeezed lemon juice |
grated parmesan or romano cheese |
extra virgin olive oil |
Cook pasta al dente. Drain. Mix in other ingredients to taste (start with olive oil to keep strands separated).
A few years ago Ted and I went down to Woody's place near Murwillumbah for 4 or 5 days, including new year's eve and new year's day. It was excellent: walking in the bush, playing scrabble on the deck, reading, skinny dipping in the river, and lots and lots of eating and drinking. Everybody cooked at least once. Keith Duddy cooked this excellent pasta.
