These biscuits are pure nostalgia for me. My mum used to make them all the time when we were growing up.
115 g | butter, softened |
1 cup | sugar |
2 | eggs |
2 cups | self-raising flour |
2 teaspoons | mixed spice |
280 g | mixed dried fruit |
Preheat the oven to 180C, and line baking trays with baking paper.
Cream butter and sugar. Add eggs and mix well. Mix in sifted flour and spices, then fold in fruit. This will be a very stiff batter. Add 2 tablespoons of boiling water and mix through.
Drop spoonfuls of mixture onto baking trays. They don't spread very much - if at all - so you can space them quite close together. Bake for 10 minutes or so - keep an eye on them and take them out when they are as brown as you like them.
Makes about 25 biscuits.
