For the cake
2 cups | self-raising flour |
1/4 cup | sugar |
30g | butter, room temperature |
1 | egg, lightly beaten |
3/4 cup | milk |
For the orange coating
125g | butter, melted |
1/2 cup | sugar |
| rind of 2 oranges and 2 lemons |
Sift flour and sugar into a bowl. Rub in butter. Add combined milk and egg and mix to a soft dough. Turn dough out onto lightly floured board and knead very lightly until smooth and no longer sticky. Cut off pieces of dough and form into 8 balls about 10cm in diameter.
Combine rind, sugar and butter. Dip each ball of dough into this mixture, and then arrange them in a greased ring pan, with each ball touching its neighbours. Drizzle any remaining mixture over the top. Bake at 190C for 20-25 minutes. Serve warm with butter.
Another one of my mum's fabulous recipes.
