Leonie's Potato Salad

14baby potatoes, boiled in their jackets, jackets removed
4eggs, hard-boiled
1/4 cuppine nuts, dry-fried
1leek, sliced into rings and fried
1onion, sliced into rings and fried
2spring onions, sliced into rings and fried
1/3 cupbroad beans, podded, skinned and fried until bright green
1 bunchasparagus, broken into short lengths and blanched

dressing
4 tablespoonsmayonaise
1 cupfresh mascarpone from the deli
1 heaped teaspoonfine Dijon mustard

Serve warm with lettuce.
