Orecchiette with greek yoghurt and green soy beans |
a handful or so | orecchiette |
2 dessert spoons | greek yoghurt |
a handful | green soy beans (in the freezer section - or use fresh broad beans) |
| grated parmesan |
| squeeze of lemon juice |
| freshly cracked black pepper |
Boil some salted water and cook the orecchiette. Meanwhile, heat up the beans (fry, microwave, whatever) and grate the cheese. Drain the pasta and mix through as much of each ingredient as seems good to you.
This is a super easy and quick recipe, which I made when I had 10 minutes to eat and almost nothing in the kitchen. If you're feeling a bit more enthusiastic or are more prepared, you could add some torn herbs, fry the beans with some crushed garlic, etc.
