Matt's zucchini cake

Cake
2eggs
1 1/4 cupscastor sugar
2 teaspoonsvanilla essence
1/2 cupmacadamia or walnut oil (or corn oil if you can't get one of these)
1 cupgrated zucchini
1 1/2 cupsplain flour
1/4 teaspoonbaking soda
1/2 teaspoonbicarb soda
2 teaspoonsground cinnamon
3/4 cupschopped walnuts or pecans

Mix all ingredients together. Transfer to a 8" x 4" loaf tin. Bake at 180C for 1 hour.


Icing
185gcream cheese
1/3 cupicing sugar
juice and zest of one lime

Mix all ingredients together, beat well and ice cake.



This is only one of Matt's many brilliant recipes. I can't believe he's going to Darwin, taking away all that amazing stash of knowledge and expertise about food, cooking, plants, plant diseases, etc etc bloody etc!
