Cake
2 | eggs |
1 1/4 cups | castor sugar |
2 teaspoons | vanilla essence |
1/2 cup | macadamia or walnut oil (or corn oil if you can't get one of these) |
1 cup | grated zucchini |
1 1/2 cups | plain flour |
1/4 teaspoon | baking soda |
1/2 teaspoon | bicarb soda |
2 teaspoons | ground cinnamon |
3/4 cups | chopped walnuts or pecans |
Mix all ingredients together. Transfer to a 8" x 4" loaf tin. Bake at 180C for 1 hour.
Icing
185g | cream cheese |
1/3 cup | icing sugar |
| juice and zest of one lime |
Mix all ingredients together, beat well and ice cake.
